Captured Summer Released


Dessert from Summer's orchards,
    peaches ripe and sweet.
Sunshine in a bottle,
   brought up from Winter's sleep.

Started in a crock
   at least a century old.
West Virginia heritage -
  sometimes sweet, always bold.

My peach wine experiment was brought up out of its resting place this weekend,  and I am much pleased.  Definitely a dessert wine - very sweet - but very smooth with a warmth at the end.   Ignoring it for several months smoothed all the initial harshness out.  This is an experiment that will now have to repeated, although I need to lighten up on the sweetness.

  3. Have you ever tried to make wine? It's surprisingly easy, and the results are quite good. Not that there's anything wrong with peach-infused spirits!

    If you're into such things, check out the Alaskan Bootlegger's Bible -- it's an awesome compendium of information on brewing, distilling, and infusing all sorts of hootch.

    1. Bob reminded me when I started that this was wine since it isn't distilled. I may also try one of the recipes that combine peaches (or plums, which also come in at the same time)and hard liqour, too.
